Inside the trendy beach club, all the foodies out there can have a seasonal tasting menu at Ethnik Cuisine, from Chef Kelston Connor, popularly known as Chef Sweets. He features shared dishes with an Asian fusion flare, such as Sushi, pad Thai, fried whole snapper, rock oven pizza &.
Chef Sweets opened his first restaurant in high school in Anguilla.He has shared his talents at many of Anguilla’s finest restaurants and villas including Pimms at Belmond’s Cap Juluca, Veya, Elvis Beach Bar & Grill, Viceroy Hotels & Resorts, Le Bleu Villa and celebrity favorite, ÀNI Anguilla.
At Ethnik Cuisine, he creates dishes that are simple yet elegant, letting the essence of the star ingredients shine through. He is always reinventing recipes to suit his sense of style and flavor.
One of the Chef favorite dishes is “Kao Soi”, a Thai Red Curry Soup. The base is made with red curry and coconut milk, with hints of kaffir lime leaf and palm sugar. Inside there are Wild Mushrooms, Noodles and Bok Choy (VG).
“It’s a dish I enjoyed frequently on my visits to Thailand”, says the Chef.
