Pizza and Wine Make the Best of Both Worlds

Pizza and Wine: A Natural Duo

What goes better together than pizza and wine? While in New York, pizza has become a class get-together comfort food, its origins in southern Italy originally had it that pizza would be an artfully-crafted dish intended for the individual. Move aside, dollar pizza: at Kesté Fulton, pizza’s reclaiming its original glory.

With a wide-ranging flavor palette bringing together dough, tomato, mozzarella, and a variety of toppings, pizza’s ultimate companion can be none other than wine, which accents every meal with notes of fruit and spice. Cavit Wines upholds the important role of wine with a spectrum of options to choose from, the most popular being Cavit’s Pinot Grigio, Pinot Noir, Prosecco, and Rosé. Of all these, Pinot Grigio is a classic favorite, while Prosecco is recommended to go with anything.

Diving into the Makings of Cavit Wine

Cavit Wines are grown in northern Italy in a region known as Trentino, where the temperate climate enhances the fruity flavors. 4,500 farming families make up Cavit’s cooperative, ensuring a sense of community is harvested with every bottle. Operations at Cavit bring together sustainable farming practices with advanced research taking place with the Institute of San Michele all’Adige, one of Europe’s leading winemaking schools. Top it all off with the most technologically-advanced winery in all of Europe, and Cavit Wines has consistently been ranked highest among brands internationally. In the U.S. alone, Cavit offers the #1 Pinot Grigio, making it a perfect choice for get-togethers.

Pairing Cavit Wine with Class Pizza

Bringing it all back to the companionship wine and pizza share, a number of pizza topping are recommended withe each wine to bring out each other’s flavors. Pair the Pinot Grigio with any cheesy pizza to balance out the heavy richness of stacked cheeses, while the Pinot Noir paired well with both meat and mushroom pizzas. Cavit’s Moscato wine brings a touch of sweetness to pizzas layered with spicy toppings like jalapeños, and Prosecco, as mentioned, goes well with anything.

To browse Cavit’s wine collection and purchase a selection for your next event, visit their website. To learn more about the ins-and-outs of pizza making, visit the Pizza Academy Foundation. And to simply pick up a pizza on your next night out, visit Kesté Fulton at 77 Fulton Street.

58 WAYS TO SUPPORT LOWER MANHATTAN BUSINESSES THIS HOLIDAY SEASON

Maybe this year is the year to accept that the 2020 Holiday season will be different.

It’s not that long ago that we made it through the toughest two seasons to spend quarantined, spring, and summer. Is this not the time of the year, that most of us long for? Shedding our heavy winter clothes, and shaking off those dreary blues, not to mention those few extra pounds we put on over the long winter months, snuggled up with cookies, hot cocoa, and scrumptious Roast Beef and Yorkshire pudding?

Wait… that was me I was talking about.

Personally, I think we need to be a little less worried about jumping on a plane to see Grandma and Grandpa, or jetting off to that island paradise just so you can jump in the beautiful piercing blue ocean in that new bikini, or parasail your way over the long white sandy beaches. It’s so overrated!

What’s not overrated is staying the course, thinking about others, do your part, from populating your travel miles with or picking up on your travels the worst virus in our lifetime.

Downtown Alliance compiled 58 Ways to Not Leave Lower Manhattan.

Holidays are a little different this year, with many people forgoing big family celebrations in favor of smaller, home-based events. All the more reason, then, to make your homebound holiday even more special.

Throwback Thursday Movie Night: What to Know And Where to Go

Looking for the perfect Thursday night plan? Catch Throwback Thursday Movie Night in Union Square Park before summer ends. Next week, August 8th, they’ll be showing Ghostbusters. If you’ve seen it, you can always go back for another watch. If you haven’t, you can now. I went to their showing of Space Jam yesterday, so I’m here to tell you how you (yes you) can turn a free movie into a full night with your friends, family, or with strangers.

Throwback Thursday Movie Night is a part of Citi Summer in the Square, an umbrella event with free entertainment throughout the week. August 8th has workout classes (Yoga, Boxing, and Tai Chi) from 7-10am, and then children’s programming from 9-5. 5 pm is when the adult-friendly fun starts, with a performance of Dueling Drummers with the NYU Steel Band. There are also more workout classes going until as late as 8:30.

Union Square Park is one of the most accessible parks to get to. The 4, 5, 6, L, N, Q, R, and W, all meet at the park. There are no tickets needed, just like the rest of Summer in the Square. Movie Night isn’t where you think it would be. Maybe it just wasn’t where I thought it would be. It’s on the North end of the park, opposite from all of those steps where people sit and watch smaller performances.

Throwback Thursday Movie Night. Photo courtesy of #summerinthesquare.nyc

The website says that Movie Night starts at 6:30 pm, but that’s just when you can start gathering. It’s also when they start offering food. Union Square has delicious food all around it, but Summer in the Square is partnered with Bocce USQ, an Italian eatery, which will be selling seasonal pizzas in the park. There is also free Honest T, popcorn (Pret A Manger), and snacks from the local Whole Foods, while supplies last.

There is nothing wrong with heading straight to the movie, putting down a blanket, and hanging out with pizza and snacks until Ghostbusters starts at dusk (which will be 8:33 pm on the 8th). Likewise, you have plenty of time to do the 5:30 pm Dance Cardio and the 6:30 pm Cardio HIIT before sitting down for pizza and a movie. But Union Square is also a hub for great shops, restaurants, and reasonably-priced food carts. Feel free to wander, as long as you’re back in time for the movie.

The movie experience itself is pretty low maintenance. The screen is a giant inflatable monstrosity, so you’ll have no trouble seeing the film no matter where you sit. It’s free-for-all picnic seating, so bring a blanket to sit on. Limited space is available, but there was plenty of room when my friends and I arrived close to dusk.

Last note: To the volunteer who danced through the opening Space Jam theme song, you made our night.

What you’ll need:

– A blanket

– Money for pizza

– Some friends

What you won’t need:

– A ticket or RSVP

– Alcohol (it’s forbidden in the park)

– Drinks (unless you hate Honest T)

Binoculars to see the movie

Taste Summertime in Italy at Sorbillo on the Bowery

Tomatoes are emblematic of two things: Italian food and summer. Sorbillo, which comes from renowned Napolitan Pizzaioli Gino and Toto Sorbillo who also operate eight restaurants in Italy, is ready to stuff you silly with pizza, pasta, and antipasti.

Sorbillo is known for offering Gino Sorbillo’s signature Neapolitan pizzas, but now the restaurant is expanding the menu to include more than just pies. Guests can choose from a variety of new pastas such a homemade Black Squid Ink Tagliolini with sautéed shrimp, clams, calamari, cherry tomatoes, and white wine; Spaghetti alla Carbonara with Guanciale and egg yolk; and Parmigiana Di Melanzane with eggplant, mozzarella, San Marzano tomatoes, and Parmigiano Reggiano. Other additions include pan-seared Salmon in herb butter served with mashed potatoes and sautéed baby spinach, Rib-eye al Profumo di Rosmarino over a bed of grilled vegetables, and Saltimbocca alla Romana—chicken rolled with prosciutto and served with smoked mozzarella and a creamy mushroom sauce.

Obviously you’ll still be ordering a few signature pizzas. The dough is handmade with Caputo type 0 organic flour then fermented using natural yeast so it is flavorful and easy to digest. Almost all of the pies feature San Marzano tomatoes, but we also love the Margherita Gialla with yellow cherry tomatoes or the Portofino with pesto, Mozzarella Bufala, and Datterino tomatoes. Sorbillo’s pizza is some of the most authentic and delicious in the city, make sure you try it for yourself this summer!

BigA and Stonebridge Let Fermented Pizza Dough Shine

Not everyone should go gluten free, but many people have discovered that consuming an abundance of gluten makes them feel less than their best. But avoiding pizza is the worst! Enter fermented pizza dough – by letting the dough ferment for 24-48 hours and eliminating the sugar that is usually used to quickly activate yeast, the pizza dough has time to ferment and develop flavor with less gluten than the typical dough. Both Biga and Stonebridge Pizza and Salad use this technique along with high quality ingredients for a superior pizza experience.

BigA sits on the corner of Clinton and Houston Streets ready to feed you all the pizza you desire. Chef Giovanni Barbieri attended Italy’s top pizza school and operated restaurants in Italy before brining his extra crunchy pizza to the US. The name BigA comes from the pre-fermented starter used in the dough that gives it its signature flavor and crunch. Barbieri uses Italian stone ground flour and imports toppings for his pies from Italy.

The dough is turned into three different dishes: Tonda, a classic round pie available in traditional or multigrain varieties; Pala, a 20-inch oval pie perfect for sharing; and Biga Crunch, a sandwich made from the same base as the Pala. All of the pies are precooked, then topped and finished to order. We suggest a Sempre Bona Tonda with prosciutto and fresh burrata and a Pala split in two – half Diavola with spicy salami and fior de latte and half Parmigiana Biga Crunch with hand crushed tomato sauce and eggplant. Don’t forget to ask for the house made hot chili oil to top your pick!

Stonebridge Pizza and Salad came to be because the owners invested in hyper-oxygenation technology that resulted in the best tomatoes they’d ever tasted. Many of the ingredients used at Stonebridge come from their hydroponic farm upstate in Schuylerville, NY. By fermenting their dough they are able to achieve a flavorful, light, and crispy crust. The fast casual setting means speed is key, and their pizzas are baked in three to four minutes. Signature pizzas include the Mushroom Fixation with mixed roasted mushrooms and truffle oil; the Spicy Hawaiian with ham, bacon, pineapple, and jalapeño; and the White Pizza with caramelized onions, bacon, arugula, and truffle oil. Make your own options as well as chef crafted salads are also available.

Smart Flour Satisfies Gluten-Free Pizza Lovers with Ancient Grains

Being gluten-free is hard, but finding exciting companies to help cater to your needs doesn’t have to be! Smart Flour, which creates products using gluten-free ancient grains, is ready to help you love pizza again! We chatted with CEO Charlie Pace about Smart Flour’s pizzas and where the company is headed.

smart flour pizzas

Downtown: How did the company start? What was the impetus?

Charlie Pace: After discovering I was gluten intolerant in 2009, I quickly realized how difficult it was to find satisfying, gluten-free dining options. During my search for foods that fit with my new lifestyle, I enjoyed a tasty gluten-free pizza at a local Austin pizza restaurant. I was immediately hooked on the ancient-grain crust that was produced by Gluten Free Kneads! I bought the company in 2011 and re-branded it as Smart Flour, thinking that name had broader appeal for pizza lovers everywhere. Eight years later, our products are now on menus in over 1,500 restaurants nationwide and our pizzas and crusts are in over 3,000 grocery stores across the country!

Downtown: What additional barriers do health-conscious companies have when coming to market?

Charlie Pace: It’s no longer enough to just offer a healthier product. Today’s better-for-you foods have to taste as good (or better!) than their conventional counterparts. At Smart Flour, delicious taste and whole-grain nutrition go hand in hand. We start with a certified gluten-free and Non-GMO Project Verified crust that’s made with a unique flour blend of sorghum, amaranth, and teff. These naturally gluten-free ancient grains deliver a healthy dose of nutrition, as well as a classic taste and texture that pizza lovers crave. We also take great care in selecting our toppings, choosing clean, high-quality ingredients like a hormone-free, part-skim mozzarella, and provolone cheese blend and the best-tasting, nitrate/nitrite-free uncured pepperoni and hand-selected sausage in the meat versions.

Downtown: What was R&D for the product like?

Charlie Pace: Creating gluten-free products can be challenging, because you need to replace the strength and elasticity that gluten brings to traditional products. Our formulas were originally developed by scratch bakers who hit upon a unique combination of ingredients and nutrients. By making a trio of naturally gluten-free, ancient grains a prominent part of our ingredient list, we created certified gluten-free pizzas that are not only allergy-friendly, but nutritious and delicious, too. Our culinary-inspired flavors include Uncured Pepperoni, Traditional Margherita made with fresh Roma tomatoes and basil, Four Cheese topped with a blend of mozzarella, provolone, parmesanm and romano, and zesty Chicken Sausage paired with roasted red peppers, garlic, onion, and savory rosemary.

Downtown: What sets Smart Flour Pizzas apart?

Charlie Pace: An increasing number of products have ancient grains in them, but they’re often pretty far down in the ingredient list. At Smart Flour, sorghum, amaranth, and teff have always made up the foundation of our products and give our pizzas a healthy boost of fiber, protein, calcium, vitamins, and minerals that far surpass other whole-grain and gluten-free options on the market. These grains also provide a tastier alternative to the bland, nutritionally-void rice and potato blends used in most gluten-free foods.

Downtown: What’s next for the company?

Charlie Pace: We decided it was time to show off our fun side and recently introduced an updated logo and new, colorful packaging that started rolling into stores this January. Keep an eye out for it next time you’re in the freezer section! This stand-out packaging is fresh and colorful, featuring gorgeous shots of our recipe’s ingredients like fresh cheese and chicken sausage. Smart Flour’s Pizza provides a modern take on a classic convenience food, appealing to today’s savvy consumers with a clean meal option that offers a boost of nutrition thanks to our crust’s ancient-grain ingredients. Using this unique, certified gluten-free crust as a base, we’re excited to be launching two new flavors this year! Our Kale and Sundried Tomato with a Garlic White Bean Sauce Pizza is for all the veggie fans out there. It starts with a sauce of pureed white beans and garlic, offering a lighter take on traditional alfredo sauce with a punch of protein. Hearty green kale is then paired with the sweet tartness of sundried tomatoes and a dash of oregano for a pizza that we think is unlike anything else on the market! For the ultimate meat lover, our Three Meat Pizza is topped with a robust tomato sauce and pairs zesty Italian sausage with spicy pepperoni and mouthwatering bacon. The meats are minimally processed and the pizza is made with simple ingredients, so there’s nothing to hold you back from digging right in! We can’t wait to share these new flavors with pizza lovers everywhere.
