Naturally Sassy Founder Sassy Gregson-Williams On Workouts, Eating Out, and Consistency

Sassy Gregson-Williams is anything but sassy! This sweetheart is a ballerina, professional trainer, cookbook author, and founder of Naturally Sassy — an online workout studio, recipe platform and app. We chatted with Sassy about what life has been like since she decided to shift her focus from being a professional dancer to work on Naturally Sassy, what she’s learned in the process, and what foods she can’t live without.

Downtown: How has your life changed since you started Naturally Sassy?

Sassy Gregson-Williams: Before Naturally Sassy I was training as a professional ballerina for eight plus hours every day. I was struggling with a recurring ankle injury and eating very little in order to stay in shape. My heath suffered, and with an injury that was keeping me from improving, I was depressed and very self critical. I may have looked the part but I felt terrible, lethargic and weak.

In the attempt to change my diet and eat nourishing food, I started getting creative in the kitchen, which turned into an undeniable passion for cooking. I loved food, and in turn began to appreciate and love my body in a way I hadn’t ever experienced.

Naturally Sassy launched as a blog and recipe platform, and as I gave up ballet to focus on my business full time I expanded to launch Ballet Blast by Sassy, a culmination of all I had learnt as a dancer and personal trainer. 

Since the launch of Naturally Sassy 5 years ago, I look after my mind and body in a very different way. I eat intuitively and intentionally to fuel my performance in the studio and in my day-to-day life. I don’t workout to lose weight or to seek perfection, I work towards goals, skill, and strength.

Downtown: Why is important to you to keep the ballet vocabulary in your workouts?

SGW: The ballet vocabulary is in French and translates to the exact motion you’re performing. For example the term Plié means ‘to bend’ which describes the action we take. I feel it’s important to keep the ballet language present in the method, as many of the moves have stood the test of time with these titles.  

Downtown: What’s the ideal length of a workout using the Naturally Sassy app?

In the online studio we have workouts from 10-20 minutes and mixes between 30-60 minutes. The individual shorter workouts are the best possible place to start when you’re trying to create a daily ritual you feel you can maintain. 15 minutes in the morning is nothing, but those 15 minutes over a week, a month, a year have a huge impact on your life. It does not matter how slowly you go as long as you do not stop. To create maximum impact it’s all about consistency.

If you’ve already created that daily habit, I suggest following our 45 minute monthly mixes. I’ve designed a workout program for every day of the week.

Downtown: What was the most eye opening thing you learned about nutrition?

SGW: The importance of variety. We’re creatures of habit and tend to use the same fruits and vegetables in the meals we make. Just switching out a red pepper for a green pepper in a stir-fry adds different nutrients to your diet. If you already eat a healthy, balanced diet, looking to diversify the ingredients you use is a great way to step up the game.

Downtown: What workout excites you the most?

SGW: The planking prima workout is one of my favorites. It’s challenging to the core, and is a great marker of my improvement as I get stronger. The swan lake leg sculpt is a fun coordination challenge, and our express blast II has an exciting cardio element that I love.  

Downtown: What have you learned about yourself in creating Naturally Sassy?

SGW: That seeing other women succeed and find confidence and grace through movement was what I was called to do. It’s one of the most rewarding feelings knowing the trickle effect movement can have on their lives. I learn something about myself with every client I train.

Downtown: What foods could you never live without?

SGW: I love my greens: broccoli, peas, edamame, and kale are my favorites. I love to sauté them with a little tamari and add lemon or a little garlic salt. Blueberries and blackberries are always frozen in my freezer. I love organic eggs and am obsessed with beyond meat burgers and sausages for a plant based protein treat.

Downtown: What are your favorite things to do in NYC?

SGW: New York has some absolutely fantastic restaurants. I love Benny’s Burritos, Caravan of Dreams, Blossom, Spring Natural Kitchen, Peacefood Café…the list goes on! I love going to see my best friend Indiana perform at New York City Ballet. Living in LA, I miss having a theatre close by.

A Healthy You, All Year Round

New Year’s has passed, and we are now full-swing into 2019. Maybe you made some resolutions, maybe you didn’t, or maybe you’re already off track. Regardless of your status, here are some tips for even the most noncommittal among us to become healthy this new year.

Drink your greens

Starting the morning off with a green juice gets your body powered up for the day and packs in those fruit and vegetable servings before you get going. Juicing your produce makes it easier to digest those sometimes hard to handle veggies but keeps the vitamins, minerals, and phytonutrients intact. Phytonutrients are chemicals found in fruits and vegetables and are especially important because they help prevent disease and keep your body functioning properly. The body easily digests the juice and absorbs a larger amount of nutrients, making juices a great way to strengthen the immune system, detox the body, and help fight chronic disease and inflammation. Investing in a juicer is an effective cost strategy and a great way to start experimenting with different juices. Add lemon and ginger to your favorite greens for some kick or use green apple or pineapple for some sweetness!

Forget the diets

If 2018 was the year of the high fiber and ketogenic diets, then 2019 should be the year of no diets. Diets do not work. (Yup, you read that right.) Making a shift toward mindful and intuitive eating is the best way to create healthy and lasting eating habits. Mindfulness, which is a form of meditation, helps combat anxiety and stress. Merging this philosophy with food allows for understanding and control over eating habits while reducing emotional eating patterns. So, if your goal is weight loss, cut down portion sizes instead of cutting out food groups, eat slowly, and pay attention to when you are satisfied – not stuffed. Sounds easy, right? While the concept is simple, new habits take time to form. Make sure your meals are balanced with lean proteins, non-starchy carbs, and good fats along with a ton of veggies. Eat slowly with no distractions, especially television. The most important thing to learn is to distinguish between hunger and the urge to use food to regulate feelings.

Be aware of the food combinations you make

Food combining is an ancient tradition with roots in Ayurvedic practices. The general idea is that eating certain foods or food groups together can wreak havoc on your digestive system since foods have different pH levels, and therefore require specific digestive enzymes that work at certain pH levels. For example, in this theory proteins and starches should not be eaten together. Protein digestion requires pepsin, a digestive enzyme that functions in an acidic environment, while carbohydrates require amylase, which needs an alkaline environment to do its job. General rules include not mixing starches with protein or acidic foods (including meat, eggs, dairy, grains, fish, and poultry), eating both fruit and dairy products alone on an empty stomach, and not combining different types of proteins together. Having a healthy gut is key and if the pH balance of the stomach is off, you may notice symptoms like fatigue, skin problems, bloating and indigestion. If you experience any of these issues, it might be worth looking into food combining.

Make an effort to move

For some people, having a strict workout regime is key. For others, setting a goal of working out every day at a specific time can backfire and promote a negative cycle to thinking. Let’s say you decide you’re going to make that 6:30AM workout every morning during the week, but life happens, and sometimes that workout doesn’t. Thinking you have “failed” your goal for the day can set you back. Instead, make a promise to yourself to move almost every day – whether it’s 20 minutes or 2 hours – without the pressure of making a specific workout at a specific time. That way, you will find time to fit it in where it works rather than shaping your day around your workout.

Carve out time for yourself

There is nothing more important than giving yourself a little love. When you put this last, you not only do a disservice to yourself, but to everyone else around you, even your loved ones. No matter who you are and what you do, having time to yourself each day will allow you to be a better, stronger version of yourself. Whether this means taking the hour at lunch to exercise, skipping the morning workout to get your 8 hours of sleep, or meditating every day, “me time” is a necessity. Taking up a new hobby or returning to an old one is another great way to get some “me time” in.

Chef Michael White- Honored

On May 3rd, 2018, Chef Michael White was honored at Project Sunshine’s 15th Annual Benefit at Cipriani’s 42nd Street This evening’s fundraiser raised over $1mm. Project Sunshine recruits and trains volunteers to deliver programs that promote creative expression, socialization, and intellectual stimulation to children facing medical challenges in 175 cities across the US and in 4 international satellite locations.

The evening was hosted by Sesame Street actor, Emilio Delgado, who was joined by former cast mates Roscoe Orman, Bob McGrath and Sonia Manzano for a live rendition of Bienvenidos to open the evening.
Later into the programing guests were treated to an intimate set by Grammy nominated Singer-Songwriter Tori Kelly, who performed an acoustic version of Don’t You Worry ‘Bout A Thing.

This year’s honorees included Stella Li, President of BYD Motors Inc., recipient of the Business Leadership Award and Chef Michael White, Head Chef & Co-Owner of Altamarea Group, recipient of the Visionary Award. “This year Project Sunshine is excited to honor Chef Michael White, an outstanding culinary talent. We celebrate his work to encourage pediatric patients and their families to make healthy food choices through Project Sunshine’s “Better Bites” program,” said Joe Weilgus, Project Sunshine Founder. “We are equally thrilled to award Stella Li for her commitment to being an architect of the Project Sunshine Healthy Living A.B.C.’s program. May her dedication to building a cleaner, healthier, and brighter, world be an example to us all.”

In addition to a silent auction, the night included live bidding conducted by C. Hugh Hildesley of Sotheby’s, on items such as a Chinatown foodie tour hosted by Andrew Zimmern and two private dinners for 12 at Michael White’s restaurant VaucluseChef White personally auctioned off the two dinners, raising over $25,000 for the organization.

As the recipient of the Visionary Award, Chef White is a talented and honorable chef. He works with Project Sunshine in order to help guide pediatric patients and their families to making healthier food choices. We thought our readers would love to get to know Chef White a bit better through a little Q&A:

First, congratulations on being honored. Tell our readers why being honored was so special for you?
It was so special to be honored by such an amazing organization. As a father, I cannot imagine what these families are going through on a daily basis. What Project Sunshine does is truly remarkable and to have them welcome myself and my team at Altamarea Group was truly a privilege and an honor.
 
Share your involvement with Project Sunshine and when you first started, and why you chose this particular charity? 
Joe Weilgus, the founder of Project Sunshine, has been a longtime, dedicated patron of many of my restaurants. Through the years, Altamarea Group has made a number of donations in support of Project Sunshine. However, this year, we came together to build upon the idea of having AMG contribute to the “Better Bites Program.” We are working to start a program in which we will have caretakers learn from our very own chefs in our restaurant kitchens, some of the basics of creating a healthy, affordable meal for their families.
 
Other than you being honored, what was the highlight of this wonderful evening?
I think the highlight for me would be seeing all of the folks who came out in support of Project Sunshine. The ability to have my wife Giovanna and the Altamarea Group team with me as I went up to accept the award and assist with the auction prizes was really such a wonderful experience.
 
DTM: Being involved in charities is important. What can you share with our readers who want to get started but do not know the first step?
Chef Michael White: Get out there. Get involved. It is really about making that initial connection with the people you are helping. When I volunteered with Project Sunshine at Brooklyn Hospital this past winter and first spoke with a little boy named Lucas, there was an immediate connection. I was able to see within those first few moments that what I was doing was so important, for him and that made it all worthwhile.
 
DTM: We love that you help educate families on choosing better when it comes to their food. What can parents do who may not have the luxury of purchasing that healthier snack/food for their child?
Chef Michael White: I always tend to think about what goes into the food. Fresh is always best but we know that sometimes, the freshest vegetables and fruits may not be the most affordable. Therefore, I recommend frozen vegetables or fruits. There are still many nutrients and vitamins, even if they are frozen.
 
DTM What can we do as a nation to help combat the higher cost of healthier foods?
  • Education is key.  Informing consumers that healthy eating doesn’t need to come at a top expense. Look for products that are in season and in abundance helps drives down cost. 
  • When you live in a space that a garden is an option, plant fruits and vegetables together with your family that you like will use and grow well in the area.
  • Also important is to look for ways to use every part of an ingredient.  For example, bones and shells for stocks, cheese rinds for a richer flavor, stems, and frowns, for additional flavor.
  • Never let anything spoil. Freeze your dishes made in large quantity, find creative ways to integrate leftover bread, juicing fruits and vegetables that might be close to turning.
 
DTM: Chef Michael White, you are truly an extraordinary chef. What was it which pushed you towards the culinary world?
Chef Michael White: I always loved to eat and had a passion for trying bold foods and flavors. My father was and is a very avid cook. As I grew up, I began helping him in the kitchen more and more. We would watch Good Morning America together back when Wolfgang Puck would do cooking demonstrations on Fridays. However, it was when I watched Great Chefs that made me realize I wanted a life in a professional kitchen. This led to me moving to Chicago and while working at Spiaggia, experiencing real Italian food for the first time. It changed my life and led me on the path I continue on today.
 
DTM: What dish is it that your family requests from you at home? 
Chef Michael White: Sunday Sauce is always very common in my house. There is nothing quite like a bowl of fresh pasta with fresh tomato sauce. My daughter Francesca is a huge fan!
 
DTM: With Altamarea, a world-renowned restaurant group, each restaurant’s cuisine is as superb as the other. Which restaurant is your favorite and why? (getting hungry just thinking about your cuisine!)
Chef Michael White: If I am being honest, I really love all of the restaurants equally, but for different reasons. For example, where Marea and Ai Fiori are fine dinings, Osteria Morini and Nicoletta are more casual. We are able to deliver excellent food, service and great experiences at every end of the spectrum. It isn’t possible to choose just one!
 
If you are a foodie like most New Yorker’s then you know good food and many great chefs. However, there’s only a handful who stand out, when we think of giving.

Smoothies For Runners

If following this year’s TCS New York City Marathon has inspired you to sign up for a marathon, a race or simply take up running on your own time, you are definitely not the only one.

Even though the temperatures are slowly dropping, you can still run outside. Just make sure you have the right activewear to keep you warm while still allowing your skin to breathe. And then there’s always the treadmill of course!

If you’re new to running, check out this post with tips on running a 5k. And if you’re a seasoned runner, it’s never too early to start training for next year’s marathon. A good training schedule can have marathon beginners ready in just 12 weeks, but you might need more time. Slow and steady wins the race. Or at least finishes it.

However, running isn’t just about putting one foot in front of the other or wearing the right outfit. Nutrition also plays a big part in getting you ready for a big race. We suggest taking some time to experiment a little on longer runs with what works for you and your body before, during and after your runs.

Smoothies are an excellent option for pre- and post-run fuel. They’re easy on the stomach, packed with nutrients and quick to put together. But be sure to read the label of your protein powder, so you know what you’re putting into your smoothie — and thus your body. Try out these two recipes.

A Healthy Alternative to Cooking

With today’s busy schedules, sometimes fitness and nutrition fall to the back burner. We at Downtown have been sampling different delivery meal plans. Stay tuned for our continued Q&A with the founders of several food delivery companies.

For the past two weeks, we have had the delicious task of sampling Nutropia menu. What struck us most is that we no longer have to think about what we are going to eat, no need to worry about portion control or clean up. We simply open the prepackaged temperature controlled carry bags delivered each evening for the next day, each meal is labeled for the appropriate meal including two snacks. At the end of the day place the carry bag back outside your door or with your doorman.

This week Downtown Magazine had a chance to catch up with James Rappaport founder of Nutropia for a quick Q&A.

Eating well is the cornerstone of good health. With the help of certified nutritionists, you can customize a meal plan geared specifically towards you. 1-Where did you grow up? I grew up in Fresh Meadows Queens since the age of 9.

2-What brought you to the fitness industry?

I started out in the health club industry when I opened Powerhouse Gym in Bayside at age 23 in 1996.  Then 6 years later after being in a very healthy environment of exercise and healthy eating, we decided to open Nutropia. We are the oldest company in the New York area (17 years and counting).

3-Had you tried other food/nutrition delivery services?

I have tried several others but none live up to what you come to expect from Nutropia. We have more variety and flexibility than all others.

4-Tell us a little about your motive behind Nutropia?

My former partner is no longer with us, he used to work for the original Zone. One day he came to me and asked if I was interested in getting into the business. Since I already lived a healthy life and was in the health and fitness field it seemed like a natural fit.

5- Who creates the menu and what makes each meal healthy & nutritional?

All menus are have been created by our chef who is a 4 year CIA graduate, dietician, and nutritionist. Our chef also lives a very healthy lifestyle.

6-Tell us a little about your team?

Well, I have a background in nutritional and physical fitness. Ranee Lafratta the lead Nutritional consultant and partner, runs the Florida office. Our head Chef Ashley Campisi oversees the New York operation and also coordinates with our Florida Chef and team to ensure the meals are exactly the same in Florida as they are in New York, consistency is key.  We also have a full team of qualified sous chefs and prep people who actually make the operation work.  It is a well-oiled machine in both locations.  Many of our team has been with us since the inception of our company.

7-Is the service for those who bodybuilders, want to lose weight or do not have the time to prepare meals?

Our plan is for everyone as we are not a one size fits all diet.  We are healthy convenience.  We have people who need to lose weight, people who have ailments, people who just want to eat good nutritious food and don’t have time to do it on their own as it takes a lot of time to shop and prepare these meals.  We have bodybuilder and athletes and busy professionals.  We service kids and older people as well.  So as you can see we accommodate most needs.  We have high protein low carb meals aka Paleo/Atkins.  We have balanced mixed meals and vegetarian options. We have something for everyone.

8-Which areas do you currently service and where do you hope to see Nutropia in 3 years?

We currently service the New York Metro area which includes New York and the 5 boroughs, Long Island (Nassau and Suffolk).  We service parts of New Jersey, Westchester and Greenwich Ct.  We also have a kitchen in west palm beach Florida that services the Southeast coast of Florida from Port St Lucie all the way down south to Miami and all areas in between. As for 3 years from now, that depends on our growth in our current areas as that is a vast area to cover. But as long as we stay on our current path we will expand further into CT and Jersey. As far as Florida the next step would be the west coast of Florida, but one step at a time as it is slowly growing there.

 

9- Can you share with us a success story of one of the Nutropia clients?

As for success stories, we have many but choose to respect the privacy of our clients. We have had many people come off their medications for high blood pressure, cholesterol and diabetes. We have had people lose the weight they want for that special occasion or event they are attending, or that race they needed to run. We had one woman who was divorced and down stick with us, get in shape and become a successful trainer. Then she entered a masters figure competition and won in part to our helping her with her diet to go along with her hard work and dedication. So needless to say we have many success stories as people have lost over 100 pounds with Nutropia. But you have to stick with it and with so much variety and good food it makes it that much easier to follow the plan and stick with it.
