Chef Mia Castro Talks Television, NYC, and More

Chef Mia Castro is a force to be reckoned with. She grew up in Puerto Rico, where she learned in the kitchen from her grandma and cooked with ingredients they harvested herself, before going on to train at the Culinary Institute of America and apprenticing for big name chefs including Wolfgang Puck, Thomas Keller, and Jose Andres. Chef Mia placed in the final two of the most recent season of Hell’s Kitchen, where the young chef outshone her fellow chefs by winning more cooking challenges than any other competitor in the show’s history. We talked to Mia, who is now a private chef in New York and Miami, about how she chose this path, what she’s learned about herself through her television experiences, and why NYC is the best.

Downtown: How did you decide you wanted to go to culinary school?

Mia Castro: About a year before high school graduation, I was forced to decide what field I wanted to specialize in. I wasn’t sure what my calling was. My mom suggested cooking, which had always been a passion and hobby of mine, so it was only fitting to pursue culinary school.

Downtown: What have you taken from growing up in Puerto Rico and put into your cooking?

MC: I grew up cooking with ingredients that were hand-picked by my grandparents from their yard in their country house in Puerto Rico. My grandmother would produce delicious dishes out of everything they harvested, and she taught me how to do that as well. I now focus my cooking on highlighting fresh, wholesome products, and extracting the most flavor out of them. Food should look delicious, but it should most importantly TASTE the part. I think it’s safe to say my background is what propelled my entire career.

Downtown: Having worked in Las Vegas and Miami, what makes working in New York City special?

MC: Competition in NYC is intense and, as a private chef, there’s definitely a bigger market here (for clients and chefs alike). The options for great restaurants are endless, so keeping up with food trends and at the same time having a unique cooking style that allows you to stand out among the rest is extremely important. I am personally motivated by being challenged, and NYC does exactly that for me.

Downtown: What have your television experiences been like? What have they taught you about yourself?

MC: My TV experiences have been extremely rewarding. I’ve learned in life that by keeping my expectations low, I can protect myself from disappointment. I went into both competitions (Chopped and Hell’s Kitchen) with the mindset that I had absolutely nothing to lose. I decided I would give both of them my very best and that I would fight until the very end. I didn’t expect to excel (because I didn’t want to feel disappointed), but both experiences exceeded my expectations immensely. I surprised myself with what I was able to produce and by seeing the endurance I was capable of. And I learned that I was more talented than I gave myself credit for, and that the only one who can stand between me and achieving my wildest dreams and goals is me.

Downtown: Why did you decide to go from restaurant kitchen to private chef?

MC: After many years of learning, being a sponge, and paying my dues in world renowned kitchens, but also of sacrificing weekends, holidays, and “Me” time in this fast-paced, highly stressful, sometimes underpaid environment, I decided I needed to make a side-step in my career. Being a private chef allows me to be creative and do what I love every day with the liberty of having as close to a “normal” life as I can. December 2017 was the first year I went home to Puerto Rico for Christmas after 7 consecutive years of missing it with my family because I wasn’t allowed to take it off work. My family is EVERYTHING to me, and I believe that life is all about balance. The side step I took provided me with a better quality of life, which is what works for me at this moment. I have nothing against working in restaurants, and my hat goes off to those who do make those sacrifices. I’m just “learning as I go,” and I learned that THIS lifestyle makes ME happier. And to me, that’s what life is about: finding what makes you happy.

Downtown: What are some of your favorite local ingredients to cook with in the spring?

MC: I LOVE peas, their sweetness, and pairing them with savory ingredients like pancetta or bacon to contrast their flavor. Asparagus is also up there. I love how savory and “meaty” they can be, especially when they’re flash-roasted at a very high heat. Simply served with lemon zest, olive oil, and freshly-grated parmesan is the best.

Downtown: After accomplishing so much at a young age, what’s next?

MC: Though I do feel I’ve accomplished a lot at my age, I’m extremely ambitious and have so many more goals set to achieve. You can expect to see me on TV again soon and I have something along the lines of a cookbook is on the horizon. I appreciate all the support I’ve received from my fans and followers!

Nonna Beppa Arrives in New York, Downtown

One of our delights on any given day is to discover new and unique restaurants. They say that you can eat out every day in New York City and yet never eat at the same place twice!
Wait, maybe you just may want to. Especially, when you find a place with exceptional, homemade delicious food, yes, just like Nonna made.
Fresh, ingredients only at Nonna Beppa. This charming restaurant is named after Chef Giancarlo “Wendy” Cacciatori’s, grandmother.
Much of the food is virtually identical to that served at the two restaurants run by Chef Wendy’s family in Comune di San Giovanni in Persiceto, a tiny town north of Bologna. These restaurants—Locanda Antichi Sospiri and Oceano—have been around since the end of WWII and have become pillars in this community, occasionally throwing both baptisms and weddings for the same guests over the decades. He hasn’t changed or updated any recipes for the New York market.
Nonna Beppa will include a window pasta making station where cooks will hand make pasta and tortellini for 12 hours a day from 11am to closing 11pm. The signature dish is Chef’s family’s beloved tortellini recipe, filled with a mix of prosciutto aged 18 months, mortadella, pork loin and 24-month aged Parmigiano-Reggiano, and served in a light broth.

Other standouts include a three-ingredient Tagliatelle al Prosciutto di Parma and and all pastas will be cooked i.e. boiled in a chicken and beef tongue broth unless otherwise requested. He’ll also be using balsamic vinegar his family has aged themselves for the last 35 years. All ingredients (besides fruits, vegetables, flour, eggs, and fresh meat) will be sourced directly from Emilia Romagna and everything available on the menu is for sale, including fresh pasta to cook at home and charcuterie and cheeses imported straight from the source.
This past week we had the “piacere delizoiso” of being invited to Nonna Beppa, from the second you walk through the door, you are greeted with smiles from the hostess, and a hug from the owners wife Valentina. So far so good. The embiance is as fresh as the homemade pasta, yes, there really is a pasta station, and or you can sit back and watch Emilia Romagna-bred Chef Giancarlo “Wendy” create his homemade family recipes.
Every dish was as delicious as the first. My favorite was the homade Tortellini in brodo I’ve never tasted something this light, fresh and oh so good. These flavors broght me back to my very own Grandmother’s kitchen in Italy.

1. What made you choose New York City for your second city located in the United States?
So many of our clients in Miami also spend time in New York and they begged us for years to open here. When we found the spot on Hudson Street, and we knew it was time. Also, opening a restaurant in New York City is the ultimate challenge for a chef and I was ready to take it on!

 

2. Why did you choose the specific location?
We chose this location because, as in Miami, we want to become a neighborhood place. We wanted to be a hidden gem for locals, away from New York’s more touristy streets.

3. What should the number one dish be that people order at Nonna Beppa one, that they cannot leave without trying?
Our tortellini, hands down! It’s my grandmother’s recipe and it’s been served at my family’s restaurants in Emilia Romagna for decades. The secret ingredient is love:).

4. Tell us a little bit about the Chef and how he got his start?
I never dreamed of coming to America and was content to continue running the kitchens that our parents and their parents before them had cooked in for a lifetime. However, after a consulting firm hired me to come to Miami to survey the Italian restaurant scene, I noticed that my land’s love for food was missing. From that day, I’ve made it my mission to spread the joy and love of Emilia Romagna cuisine.

 

 

5. Would you like to tell her readers?

4 Offbeat Ways to Enjoy Miami

 

The winning combination of ultra-luxurious hotels and pristine sandy beaches makes Miami one of the most popular travel destinations in America. Miami is definitely not a laid-back beach destination where you can drink beers from shacks and quietly listen to Bob Marley. Miami is all about the glitz, glamor, and the nonstop party atmosphere. Take to the Skies: While slowly driving through Ocean Drive is the quintessential Miami thing to do, there is another way to explore this beautiful city. There are quite a few helicopters touring companies in Miami that give you short tours of the city. Thanks to the competition, the prices of the helicopter tours are pretty reasonable. For example, per person cost of booking 30-minute Miami helicopter rides costs around $200. Considering that renting an entire chopper costs thousands of dollars, the per-seat booking makes these helicopter rides pretty accessible. Miami helicopter rides usually cover the beach destinations including, Miami Beach, Fisher Island, Sunny Isles, Virginia Key, North Beach, South Beach and other locations. You can book these helicopter rides online and the tours usually start from the Opa Locka airport in Miami.

Get a Taste of Cuba in Little Havana: While some may say it has become too touristy, Little Havana still offers a great selection of Cuban cuisines and great shopping opportunities to make it to our list. This place is as vibrant as the beachfront party destinations in Miami. However, Little Havana has a different cultural vibe with live Cuban music and specialty shops. At the risk of being overcharged, you can pick up some authentic Cuban cigars from one of the many Cigar shops and factories in the area.

Ride an Airboat to Explore the Alligator Riddled Swamps: Craving for some quiet time? Head over to the swamps and rent an airboat. The Everglades National Park is just an hour’s drive away from midtown Miami. Apart from the beauty of the unspoiled nature, it offers plenty of opportunities to spot wildlife. Considering these swamps are riddled with alligators, there is a certain thrill factor to these tours.

Walk the Streets of the Art Deco District: While you cannot travel back in time, walking the streets of Miami’s Art Deco district is the next best thing. All the historic 1930s buildings are restored to look as if they were built yesterday. All the buildings have beautiful pastel shades and amazing neon lightings. Our suggestion is to visit the art deco area both at night and day. During daytime, you see the 1930s architecture in full glory as the building are kissed by the Miami sun. This gives you the opportunity to see the subtle architectural details. At night, these buildings come to life with glowing neons and colorful lighting.

A New Vegan Restaurant, Planta, Hits South Beach

Located on 850 Commerce Street, Planta, a new vegan restaurant, takes over South Beach.

With stars like Hailey Baldwin and Bella Hadid frequenting this establishment, this vegan restaurant can satisfy even the most hardcore meat lover.

Originally a Toronto-based restaurant, David Grutman, a Miami nightlife guru, brought the restaurant to South beach with Chef David Lee in the kitchen.

The menu offers light nutritious comfort foods bursting with flavor, accompanied by an airy and colorful atmosphere.

The restaurant aims to create delicious vegan substitutes for popular meat dishes. A favorite on the menu is the coconut ceviche. It is made with raw coconut shreds marinated in lime juice and jalapeno peppers, garnished with pickled cucumbers and coriander. This eatery has also created vegan alternatives to dishes such as the meat lover’s pizza where the mozzarella is substituted with cashew cheese, and mushrooms for the sausage.

While those are popular dishes on the menu, Planta’s other items such as their pasta and vegan sushi should not be overlooked.

Biking Through Miami

Anyone else tired of looking out the window at grey skies, dreary weather and numb hands after a few minutes out in the cold? We are too.

If the good weather won’t come to us, we might just have to go to the good weather ourselves. Weekend getaways are an ideal break for busy New Yorkers looking for breathing room and sunny weather.

There are so many wonderful cities to visit all over the US, meaning you don’t have to spend a ton of time on travel. Take Miami, FL for instance.

Schwinn Ambassador Jeanette Zinno recently took a trip to Miami and biked through its sunny streets — and she brought us along.

 

It was a quick welcomed escape from the chilly weather in New York City. The temperature in Miami averages 60-75 degrees in the winter, making it the warmest city in the US during this season and a perfect destination for biking. On this trip, I rode a Schwinn Cruiser, and to me this bike is the epitome of warm weather! It’s a comfortable, easy ride and I adored the mint green color and basket on this bicycle.

The city of Miami is even redesigning the street network in 2018 to create more bike lanes throughout the city.

 

OTL in the Design District

I started my day at OTL to grab some biking fuel A.K.A coffee and eggs; it’s a new spot in the Miami Design District that focuses on good food and craft coffee. It has a cute little casual outdoor dining area where you can prop up your bike and enjoy breakfast.

*Travel Tip: Get the Tortilla Española if you ever find yourself there!

 

The Wynwood Walls

After breakfast, I rode from the Design District to Wynwood to check out the Wynwood Walls. Launched during Art Basel, what began as a few commissioned murals to beautify the area morphed into the city’s only outdoor street art park, featuring more than 40 murals from a roster of world-renowned artists. It’s a great neighborhood to explore by bike!

*Travel Tip: In the actual outdoor museum you can’t walk around with your bike, but there are plenty of places to lock up your bike, so make sure to bring a bike lock.

 

Lolo’s Surf Cantina in Miami Beach

I then rode from Wynwood all the way down to Miami Beach, riding on the boardwalk next to the beach was gorgeous! I worked up an appetite and indulged in some delicious Mexican beachside bites at Lolo’s Surf Cantina. It’s located right off of the beach in the glamorous neighborhood of Miami Beach, which is famed for its colorful art deco buildings, white sand and surfside dining.

* Travel Tip: If you’re riding on the boardwalk, make sure you have a bell. Some of the paths can get very busy!

New York Air Charter Service’s Richard Thompson talks to Downtown

Air Charter Service was founded in 1990 by Chris Leach, who had realized the need for a customer-centric aircraft charter company. The son of a pilot, Chris started Air Charter Service from the basement of his house. Less than three decades later, ACS arranges close to 10,000 charters each year, with a network of offices spread throughout North America, South America, Europe, Africa, Asia and the Middle East. Furthermore, its annual revenues are around a half-billion dollars.

Richard Thompson, originally from England, joined the ACS team in 2004 as Cargo Sales Director. He moved up in the ranks to Executive Vice President of North America, working out of the company’s New York office, in February 2013. A little over a year later, Richard became President of the Americas for the company.

How did you wind up working with the New York Air Charter Service office? Did you know someone at the company?



Richard Thompson: I joined ACS in 2004 and worked within the London Cargo team. In Jan. 2011, our Chairman Chris Leach offered me the opportunity to move from the U.K. to New York and take over the Cargo Sales Director position. This was the second best decision I ever made — after asking my wife to marry me! I’ve never looked back.

What do you remember about the first time you ever flew privately?

RT: As I joined our Cargo Division, my first charter experience was on an old Russian cargo aircraft called the Antonov-26 moving freight for FedEx. The minute I set eyes on the aircraft in Ostend, Belgium — where it was based — I knew this was the job for me.

What sorts of planes does the company offer?

RT: We don’t own a fleet of aircrafts, so we are not tied to any particular aircraft type. We have access to around 50,000 aircraft worldwide, ranging from helicopters and private jets up to Antonovs and Boeing 747s.

Any surprising amenities that a person would find onboard one of the planes?



RT: On the older cargo aircraft, you’re lucky if there is a bathroom or hot water to make a coffee! On our Passenger Jet side, depending on the aircraft type, customers can enjoy all sorts of comforts like inflight wi-fi, personalized catering, media centers, etc.

How does a person go about reserving one of your planes? Do they just call?

RT: Calling or emailing are the most common ways to contact us. We’ll then present you with a few options, varying in price, timings, availability, etc.

Where are your plans? Does the company provide rides to the airport?

RT: While we don’t have a fleet of our own, we can arrange transport to the airport, hotels and even trips whilst you are at your destination.

What sets your company apart from other charter services?



RT: I’d like to think that is a combination of factors. Our specialists’ knowledge and exceptional customer service are what we have built the company up on, but now our size offers the financial security that others struggle to match. Also, with 20 offices around the globe, we’ll always have a local office to where you are, or where you’re going to.

Who is the average customer of your company? Executives? Celebrities? All walks of life?

RT: We get all walks of life using our services, but we do get a lot of celebrities, often A-list, and sports stars. Flying by private jet saves so much time that high-profile executives use jets to get to more than one meeting a day, or just to get home for the evening.

How many people work in your office? Who else is on the team there?

RT: We currently employ over 80 people across our North American offices, which are in New York, Los Angeles, Houston, Miami and Toronto. Our North American sales divisions are Cargo, Executive Jets, Commercial Jets and Hand Carry.

When not busy with the New York Air Charter Service, how do you like to spend your free time?



RT: My wife and I enjoy traveling, especially within the USA. Most recently we have fallen in love with Hawaii and have made several trips out there on vacation. New York is our new home and we enjoy everything the city has to offer.

Do you have a favorite restaurant near your office?



RT: One thing New York is not short of is restaurants. My two current favorites are John’s Pizzeria on Bleecker — this was the first New York pizza I ever had — and ABC Kitchen on 18th Street for their food, atmosphere and great cocktails.

Do you have tickets to any upcoming concerts or events in New York?



RT: Yes, we have tickets for the Coldplay concert this summer at the MetLife Stadium. We also attend the U.S. Open Tennis each year in Flushing.

Finally, Richard, any last words? Something to encourage others to put chartering a private jet on their bucket list?

RT: I think we have become numb to the excitement of air travel. Commercial flights almost feel like a commute. If it is within your budget to charter a private aircraft — you’d be surprised — try it and I think you’ll be reminded of how special flying actually is. Not to mention the tailored experience you’ll receive and more importantly the stress removed from the whole process. We have enough of that in life already!
