French Onion Soup, Gluten-Free and Downtown Style

Fall is right around the corner, I say reluctantly, with marginally less of a tan than I had at this time last year. As much as I wish not to wish summer away, I am a sucker for fall. I am a cozy sweater fiend, a pumpkin patch regular, and a lover of fall comfort food. That’s why I took it upon myself to prepare the masses for the fall season with French onion soup – Downtown style.

This was my first time attempting this dish that I had only seen in ominous pubs and restaurants, but just never thought to try it. It didn’t help of course, that I have Celiac Disease which prevents me from having gluten and therefore the bready, hearty, decadent soup such as this one.

It wasn’t until I saw a TikTok of the dish being made that I decided I had to have it – and modify it to be gluten-free – regardless of the fact that it is July.

I gathered my nearest family members and got to work. My family is full of restaurant industry veterans, two of which helped me achieve such a task. We didn’t follow a recipe and just went with our gut!

Recipe

Here are the ingredients you will want to add to your grocery list:

  • 3 onions; one white, one yellow, and one sweet.
  • 4 garlic cloves
  • Beef broth (or bouillon)
  • 1 cup of Swiss
  • 1 cup of gruyere
  • Fresh thyme
  • 1 gluten-free baguette
  • Extra virgin olive oil
  • Butter
  • White wine (we used Riesling)
  • Salt and pepper to taste

 

The first task was to cut the onions. We used three variations; one white, one yellow, and one sweet. Slice them into slivers and toss them into a large pan on low heat. You’ll want this to be ideally large enough to house your whole soup. Prime your pan with a douse of EVOO and two pats of butter. Sweat and sauté the onions until they turn golden and completely caramelized.

In a pot on the side, prepare your broth. You can use beef broth for this, but instead, we boiled water and added beef bouillon. Add more or less to taste. Throw in some fresh thyme.

Once your onions are decadently caramelized, add in 3 cloves of minced garlic, a pinch of salt, pepper, and sugar. Let this flavorful mixture combine before de-glazing the pan with a splash of white wine. We used Riesling.

Next, you’ll want to ladle your broth into the onion pan. This will help to gradually introduce flavors before you pour the rest in. Go ahead and do that now. Let your soup simmer while you prepare your other ingredients.

Slice your baguette on the bias at about one inch. We used one from Against The Grain, the brand I go-to for all of my gluten-free recipes that involve bread. The bread is made from tapioca starch and mozzarella cheese, so it mimics that glutinous stretchy texture. It’s delicious. Pop the pieces on a baking sheet and drizzle your olive oil over them. Bake until lightly golden and crispy.

While you wait for your bread to toast, grate your Swiss and gruyere. Combine them in a separate bowl and set them aside.

Once the bread is out of the oven, rub a fresh-sliced clove of garlic to each face of every slice. This step is crucial and adds so much necessary flavor that really comes through in the end.

Ladle your soup into oven-safe bowls or ramekins, and top each with a few slices of bread. Work quickly as you can to avoid letting the bread sink into the soup. Top the ramekins with a generous helping of cheese. In hindsight, we could’ve topped ours with even more. Don’t be afraid to be generous.

Top each with more fresh thyme, and throw them back into the oven to broil for roughly five minutes.

Finish just in thyme – with thyme. 🙂

Take the bubbly bowls of love out of the oven and dig in. Find that the bread soaks up the rich broth and that the umami flavor of the cheese pairs wonderfully with the sweet onions. I hope you love this dish a much as I do, having had it for the very first time. I certainly don’t think it will be my last. Bon appetit, Downtowners!

Delicious but after that, I’m ready to take a nap!

I’m not a cereal person, I find myself enjoying cereal in the evening more than morning, but I must say these next four have quickly become my favorite vs my usual cheerios or rice Chex, and I am enjoying cereal for breakfast again.

Heritage Flakes, I was a little hesitant, I’m not a fan of spelt, but I must say I was delightfully surprised. Their number one organic cereal, thanks to its healthy ancient grains, with a touch of organic honey and sea salt. These deliciously crunchy flakes were crafted with six ancient grains: KAMUT Khorasan wheat, quinoa, millet, spelt, oats, and barley. Rich, nutty, and flavourful, each hearty bowl comes with 23g whole grains and 5g of plant protein.

Talk about waking up your taste buds, I ate this one separate and also added it to my other cereal bowl. Invigorating turmeric granola with crunchy cashews and powerhouse ingredients turmeric, cinnamon, ginger, and black pepper, which are known to support anti-inflammatory and blood sugar balancing functions of the body.

We received a sample of this relatively new powder and were floored. I made mine with almond milk, a half banana, and or some fresh berries. Huel Powder v3.0 is a nutritionally complete meal in powdered form. Just mix with water in the free shaker provided and you’re good to go. Huel Powder contains an ideal balance of protein, carbs, essential fats, fiber, all 27 essential vitamins and minerals, phytonutrients, kombucha, pre-and probiotics.

Snacks – when it comes to snacks, you have to choose right or you will blow your caloric intake for the entire day in just one bite.

OK., yes, skeptical for sure, but one bite of Without a Trace, and these little sweet sun-ripened organic dates combine with the tartness of fresh raspberries and a hint of chocolate, did in fact create a powerful bite.
Oh boy, I’ll bet you cannot eat just one! Without A Trace Chocolate Chip cookie, is by far the best ever health cookie I’ve tasted in a very long time. Sometimes you just want to have fun! Our Soft Chocolatey Chip cookie is sweet, chewy, and yummy all in one.

Always in my bag, we get hungry throughout the day, especially if you are like me who swims or bike in the morning and then keep going until 6 pm. Thi delicious chewy mix of gluten-free oats, flaxseeds, and chia seeds combines with the classic flavor of cinnamon and just a hint of sea salt.

The day restaurants citywide have been waiting for is finally here. Governor Cuomo announced Wednesday that indoor dining can resume in New York City on September 30.

The announcement comes with a list of restrictions and rules intended to prevent further spread of COVID-19. Restaurants will start at 25% capacity. If the citywide infection rate stays low, restaurants can increase their indoor capacity to 50% on November 1.

But if the infection rate goes back up, restaurants may be forced to shut down again.

Still, the announcement is good news for local restaurants. For months, establishments have been pleading with the mayor and governor to release a plan for a return to operating indoors, particularly since the infection rate has remained below 1% for the past month.

The service and hospitality industry has suffered considerably due to COVID-19, and the push for indoor dining was a push for its continued survival. The pandemic has been especially tough on bars and restaurants, an industry that recently employed more than 315,000 New Yorkers but has been operating at a fraction of its usual business since the city reopened. Thousands of establishments, including some of New York’s most storied diners and watering holes, have shuttered for good or shouldered a huge financial burden since the pandemic started.

—Establishments must adhere to enhanced air filtration, ventilation, and purification standards, though specific details on these standards are not yet available

It’s unclear how many bars and restaurants closed so far, but a New York Times report in August said as many as one-third of small businesses may have been lost for good. Expanded outdoor dining, which was introduced in June, is currently slated to last through October — it has been a hit with patrons, and some hope it will get extended indefinitely. Still, industry leaders have complained, the governor’s restrictions and enforcement have been too severe, causing even more financial problems.

High Street on Hudson, the all-day restaurant in the West Village, where head baker and partner Melissa Weller and chef Mary Attea have teamed up to revamp the menu.

I met Chef Weller and Attea at GrowNYC Grains in the Union Square Greenmarket to pick up 25-pound sacks of einkorn, the world’s oldest known variety of wheat. Weller makes a dense bread with einkorn flour and whole grains that she slices thinly for the base of the tartine she and Attea collaborated on.

 

We also picked up a bunch of breakfast radishes from Eckerton Hill Farm in Berks County, PA and beautiful radish microgreens from Windfall Farms of Montgomery, NY.

Weller’s einkorn loaf is best the day after it is baked.

The untoasted slices are slathered with a thick layer of butter that Attea has infused with lemon. Chunky slices of pink radishes are topped with shaved breakfast radishes and microgreens. Another splash of lemon covers the dish before Attea cuts open a beautiful soft boiled egg and showers the whole thing in Bottarga, a luxurious cured mullet roe beloved by chefs. The radish tartine is a dish that truly reflects Weller and Attea’s new partnership.

Fuel Your Week With Healthy Snacks

People often believe that coming to the gym and doing abs for an hour will undo all of the damage from a fun weekend. MYTH! Sorry friends, but you cannot out-work a bad diet! As New Yorkers, we are always on the go and are looking at what’s most convenient- we grab the chips they offer in the office and eat things out of vending machines. Today, I’m going to share with you some of the best healthy snacks to bring with you to work so you can avoid grabbing the naughty foods! At the end of the day, you’ll be saving money and consuming healthier and more nutritious foods. 

1. Baked carrot chips

Drop the Lays and replace them with these delicious and easy-to-make carrot chips! Carrots are naturally sweet, so they’re a perfect healthy snack when you’re craving something sweet and crunchy!

steps:

Slice the carrots on an angle to make the chips longer. Take the slices and toss it in oil, mix it with some sea salt, cumin, and cinnamon! (Tip- cinnamon is a natural metabolism booster!) bake until crunchy! You can also do this with sweet potatoes to make some sweet potato fries 😁

2. NO BAKE PEANUT BUTTER ENERGY BITES

These are my favorite healthy snack to make! All you have to do is mix:

  • 2 tbsp honey
  • 2/3 cups creamy peanut butter 
  • 1 cup old fashioned rolled oats 
  • 1/2 cup cocoa chips or semi-sweet 
  • 1/2 cup flax seeds 
  • Roll it into a ball and put them in the fridge and enjoy!

3. MASON JAR MUNCHIES

Grab a mason jar and fill the bottom with either peanut butter or hummus (both healthy fats) and decorate the jar with sticks of carrots, celery, peppers, or cucumbers! The healthy fats will keep you feeling fuller for longer!

4. EGG WHITE BAKE BITES! 

It’s pretty much an egg white omelet on the go! This is the perfect healthy snack to bring because it’s high in protein, low in fat and carbs, and it’s gluten-free! Here’s what you’ll need… 

* take your muffin tray and spray it with some non-stick spray 

* Fill the tray with spinach leaves, and veggies of your choice! (Tomato, spinach, peppers, etc) I like to add salt and pepper as well! 

* Pour the egg whites on top of each of the veggies in the tray 

* Bake at 375F for 17-20 minutes, remove, let it cool down and enjoy!

5. OVERNIGHT OATS

Fair warning, this recipe might become an addiction. You’ll feel guilty eating it, even though you shouldn’t! This healthy snack or breakfast actually contains cinnamon and oats which are natural metabolism boosters! 

Here’s what you’ll need… 

  • 1/2 cup rolled oats
  • 1 cup almond milk
  • 1 tablespoon chia seeds
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon honey, (maple syrup for a vegan option)
  • 1 banana, sliced
  • 2 tablespoons natural creamy peanut butter

How to make it- 

  • Combine the first 6 ingredients listed and mix well- serve into 2 separate small containers or mini mason jars! 
  • Layer the banana and peanut butter and sprinkle the remaining oat mixture on top. Cover the mason jar, and let it sit in the fridge overnight.

Downtown: How did the company start? What was the impetus?

Charlie Pace: After discovering I was gluten intolerant in 2009, I quickly realized how difficult it was to find satisfying, gluten-free dining options. Downtown: What additional barriers do health-conscious companies have when coming to market?

Charlie Pace: It’s no longer enough to just offer a healthier product. Today’s better-for-you foods have to taste as good (or better!) than their conventional counterparts. At Smart Flour, delicious taste and whole-grain nutrition go hand in hand. We start with a certified gluten-free and Non-GMO Project Verified crust that’s made with a unique flour blend of sorghum, amaranth, and teff.
