Vegan Recipes to Cook at Home During Quarantine

Quarantiners were so excited to cook at home at the beginning of isolation – we saw many great recipes on social media. By now, most of you probably ran out of creativity and can’t wait to dine out.

But while our favorite restaurants remain closed, maybe these recipes from Parma will inspire you to continue to cook even more delicious meals. They are all vegan and made with their non-dairy parmesan cheese. A Vegan Fettuccine Alfredo? Yes, this is possible. You can still be in your food comfort zone while discovering new cuisines inside your own kitchen? 

Vegan Fettuccine Alfredo

Ingredients

  • Noodles or Zucchini Noodles*
  • 1 Cup Cashews (depending on how thick you want your sauce)
  • ½ Lemon to taste
  • 1 Cup Parma! (1 – 3.5oz bottle)
  • 1-2 Cups Water
  • Salt to taste
  • Basil or parsley as garnish

Directions

Cook your noodles as directed. Blend the dry cashews into a flour. Add 1/2 the Parma! then slowly blend in water. Add additional Parma! to desired consistency and taste; add salt to taste. Put a portion of noodles onto a plate or bowl, add a dollop of sauce on top. Garnish with Parma! and fresh herbs.

*Zucchini Noodles – 1 or 2 Zucchini – use a Spiral Slicer for angel hair pasta or a Spirooli Slicer for thicker noodles, or using a wide grater, make long thin strips.

If you are using wide zucchini strips, layout the strip put a dollop of cheese on top, and roll it up.

Parma! Poppers

Ingredients

Directions

  1. Preheat oven to 375 degrees.
  2. Saute peppers, onion, and mushrooms until soft.
  3. Mix all ingredients together. Stuff jalapenos. Sprinkle Parma! on top. Place on parchment paper on a cookie sheet and bake for 20 minutes.

Creamy Pesto Pasta

Ingredients 

  • 16ox box pasta (your favorite)
  • 8oz sliced mushrooms
  • 1 bunch asparagus, ends removed, cut into 1-inch pieces
  • 1/4 large red onion chopped
  • 2 cups fresh packed basil leaves
  • 2 cloves garlic
  • 1 lemon (zest and juice)
  • 2/3 cup veggie or olive oil
  • 1/4 cup pine nuts
  • 1/2 cup nutritional yeast
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2+ TBSP Parma Original

Directions

Preheat oven to 425. Begin cooking pasta in boiling water. While pasta is boiling, combine mushrooms, asparagus, onions, a little oil/salt/pepper, spread onto a baking sheet and bake 12-15 minutes. To make the Creamy Pesto Pasta sauce combine the basil, garlic, lemon zest + juice, oil, pine nuts, nutritional yeast, salt, and pepper in a food processor or large personal blender and blend until creamy. When pasta is done, drain all but 1/4 cup water (a little pasta water helps the creaminess), combine pasta with mushrooms, asparagus, onions, and pesto, sprinkle generously with Parma and serve.

Where to Get Cheesy on National Grilled Cheese Day

National Grilled Cheese Day is upon us! On April 12th we celebrate all things cheese between bread (not that we don’t worship the world’s best sandwich every day). Here are a few of our favorite places to get cheesy!

Murray’s Cheese

To wrap up their twelve days of specials, Murray’s will be offering their signature Murray’s Melt for just $1.12 between 8:00 AM and 4:30 PM. Head to the Melts counter at their flagship store on Bleecker Street for a good, old-fashioned classic. 254 Bleecker Street

Looking for something super indulgent? Ed’s Lobster Bar stuffs their melty grilled cheese with fresh lobster for a can’t-miss treat. If you love to dip your sandwich, the lobster bisque makes a great accompaniment. 222 Lafayette Street

Clinton Hall

If you like your food to be a little extra, Clinton Hall has a showstopper for you. Their famous doughnut grilled cheese pairs melty mozzarella with a freshly glazed doughnut suspended above a bowl of classic tomato soup. Multiple Locations

This French onion soup grilled cheese at Mother’s Ruin will have you questioning why you don’t eat at bars more often. The inside is stuffed with the beloved combo of gruyere cheese and caramelized onions and the outside has crisped cheddar cheese and chives. BLACKBARN Restaurant

This ooey, gooey grilled cheese is made with aged cheddar, tarentaise, manchego, and roasted garlic for a gourmet upgrade and served with a cup of tomato soup. 19 East 26th Street

BLACKBARN Cafe & Bar @ Chelsea Market

For something a bit more toothsome, BLACKBARN’S cafe has a brie and NY apple grilled cheese with watercress and jalapeño jam on toasted brioche. Weave your way through Chealsea Market for this flavorful combo! 448 West 16th Street

Boucherie

Le Croque Champignons is a truly glorified grilled cheese. The sandwich is stuffed with house made wild mushroom ragu and gruyere cheese with lots of extra cheese on top. There’s a mixed green salad on the side but you can totally ignore it in favor of more cheese. Multiple Locations

Melt Shop

If you’re really ready to go all out, head to one of Melt Shop’s nine NYC locations for this month’s special: the Notorious CHZ. This triple-decker behemoth is loaded with muenster, pepper jack, brick cheddar cheese spread, and truffle mayo between three pieces of parmesan-crusted bread. Nothing has ever looked more indulgent! Murray’s Cheese Celebrates National Grilled Cheese Month with Special Flavors and More

National Grilled Cheese Month is here! Murray’s Cheese is dedicating the month of April to appreciating the perfect sandwich, the grilled cheese. For the first 11 days of April, leading up to National Grilled Cheese Day on April 12, Murray’s will be featuring a different special grilled cheese sandwich each day at their Melts counter in our Bleecker Street flagship store (254 Bleecker Street).

In honor of National Grilled Cheese Day on Friday, April 12, Murray’s will be selling their signature Murray’s Melt for just $1.12. Customers can stop by anytime from 8am – 4:30pm to purchase a delicious grilled cheese sandwich for under $2. See the calendar below for a full list of offerings!

April 1 – The French Onion: French raclette, cornichons, and French onion confit

April 2 – The Sweetest Date: Pawlett, date syrup, apple butter, and bacon

La Cafette and Murray’s Cheese Pair Up for a Wine and Cheese Pairing Class

There’s nothing we love more than a crisp glass of wine and a luscious chunk of cheese. As outdoor entertaining season returns, La Cafette and Murray’s Cheese are ready to remind you how it’s done. The duo will be hosting a wine and cheese pairing class at the Williamsburg restaurant on April 10th at 7:00 PM. The 80-minute class costs $40 per person and will be led by French wine expert and Level 3 sommelier Yann Bouey of wine importer Wineberry. The class will feature five delicious pairings, and if you’re still hungry after you can order one of La Cafette’s French classics like escargots or steak tartare. Get your tickets today!

Iconic Murray’s Cheese Shop Opens Customizable Mac and Cheese Bar

In case it hasn’t already taken over your Instagram feed, we’re here to tell you iconic Greenwich Village shop Murray’s Cheese has opened up a mac and cheese bar. The fast casual concept is right next to their flagship Bleecker Street shop, so you’ll definitely want to take home a few wedges so you can get your cheese plate on at home.

Murray’s has partnered with Sfoglini, beloved New York pasta maker, to exclusively use their radiator pasta in all of their mac & cheese offerings. Sfoglini’s radiator pasta is made using only two ingredients – organic durum semolina and water, making it the perfect base to capture the flavors of our mac & cheese options. The shape of the pasta also serves a purpose, each nook and ruffled edge acts as a vehicle to have sauces and add-ons incorporated into every single, cheesy bite.

The signature flavors include Buffalo Chicken with blue cheese and buffalo sauce, Carbonara with pancetta and peas, French Onion with caramelized onions and bacon, and a weekend only breakfast version with sausage, bacon, and an egg. Diners can also customize their own cup of goodness with premium ingredients that range from pesto and roasted tomatoes to ‘Nduja and a giant ball of burrata. The shop is open daily at 254 Bleecker Street from 11 AM until 8 PM so you can eat mac and cheese all day!
